    Hi everyone and happy holidays! My name is Danielle Cormier and I am a singer/songwriter based in Nashville, TN.

    This Christmas I will be heading home to Pinehurst, NC to celebrate with my family. While Christmas looks different nowadays, I am really looking forward to having a few days of rest and quality time with them! While it may be more of a fall treat, this time of year I love to make “Pumpkin Coffee Cake.” It’s not too sweet and perfect to have on a cold morning with a cup of hot coffee. Check out the recipe below and I hope you enjoy making it for your loved ones!

    For Streusel:

    • 1 cup brown sugar
    • ½ cup sugar
    • ½ tsp salt
    • 1 ½ tbs cinnamon
    • 1 cup butter
    • 2 ½ cups flour

    For Cake:

    • 3 cups flour
    • 1 ½ tsp baking soda
    • 1 ½ tsp baking powder
    • 1 tbs cinnamon
    • ½ tsp salt
    • 1 cup brown sugar
    • ½ cup sugar 1 cup butter
    • 2 eggs
    • 2 15 oz. cans of pumpkin puree
    • ½ cup powdered sugar 1 tbs milk

    1.  Preheat oven to 350, spray 9 x 13 baking dish

    2.  Prepare streusel, add all ingredients, then add flour, set aside

    3.  For cake, add flour, baking soda, baking powder, cinnamon, and salt in a large bowl, whisk to combine

    4.  In a separate bowl, add sugars and butter to bowl and beat until light and fluffy

    5.  Beat in eggs and pumpkin, then add flour mixture

    6. Spread batter in pan, take the streusel and form large crumbs and top the cake

    7. Bake for 50 minutes

    8.  (Optional) Whisk powdered sugar and milk to make glaze and drizzle over top before serving

    Danielle recently released her new Christmas single called “Merrier With You.

    With festive lyrics like presents all wrapped up in a bow, sneak a kiss under the mistletoe, “Merrier With You” is sure to get listeners into the holiday spirit.

    “Every year I release an original Christmas song,” Danielle explains. “Originally, I had thought about recording a cover of a classic this year, but while I was looking, I became frustrated at my options and decided to write another one of my own. That’s where the inspiration started! I asked my friend, Karlie Bartholomew, to help me write the song and Merrier With You was born! We took our personal experiences of how we celebrate with our respective partners and put those ideas into the song. But, this song isn’t just for couples celebrating the holidays together…families, friends and roommates can all take something away from this. I hope that listeners can relate in finding those people who make the holiday season merrier.”
